Description

This easy crockpot chicken noodle soup is pure comfort food at its finest! Tender chicken, fresh vegetables, and egg noodles cook together in a flavorful golden broth with minimal effort. For the Soup Base:

1.52 pounds boneless, skinless chicken breasts (or chicken thighs for richer flavor)

4 medium carrots, peeled and sliced into rounds

3 celery stalks, chopped

1 medium yellow onion, diced

3 cloves garlic, minced

6 cups low-sodium chicken broth

2 bay leaves

1 teaspoon dried thyme

1 teaspoon dried parsley

1 teaspoon salt (or to taste)

½ teaspoon black pepper (or to taste)

For the Noodles:

2 cups egg noodles (or your preferred pasta shape)

Optional Toppings:

Fresh parsley, chopped

Fresh dill, chopped

Squeeze of lemon juice

Crusty bread or oyster crackers for serving


Instructions

1. Load the Crockpot

Place chicken at the bottom of the slow cooker. Add carrots, celery, onion, garlic, broth, and seasonings.

2. Cook

  • Low: 6–7 hours

  • High: 3–4 hours

The broth will smell rich and warm as it cooks.

3. Shred the Chicken

Remove the chicken, shred it with two forks, then place it back into the crockpot.

4. Add the Noodles

Add egg noodles. Cook 10–15 minutes on high, or until soft. Check often so they don’t overcook.

5. Taste and Adjust

 

Add salt, pepper, or fresh herbs as needed.

Notes

Noodle Timing: For best results, add noodles in the last 20-30 minutes of cooking. If you’re meal prepping or making this ahead, cook noodles separately and add to individual bowls when serving to prevent them from getting mushy.

Frozen Chicken: You can use frozen chicken breasts directly in the crockpot. Add an extra hour to the cooking time on low or 30-45 minutes on high. Ensure chicken reaches 165°F internal temperature for food safety.
