Ingredients
  

8 oz flat rice noodles (fresh or dried)

1 lb flank steak, thinly sliced against the grain

2 tbsp soy sauce

1 tbsp oyster sauce

1 tbsp dark soy sauce

1 tsp sesame oil

2 tbsp vegetable oil (for stir-frying)

3 cloves garlic, minced

1/2 onion, sliced

1 bell pepper, thinly sliced

1/2 cup bean sprouts

1/4 cup green onions, chopped

1/4 cup Chinese rice wine or dry sherry (optional)

1 tsp sugar

Salt and pepper, to taste

Instructions
 

If using dried rice noodles, soak them in warm water for 30 minutes until softened. Drain and set aside. If using fresh noodles, simply rinse them under cold water and set aside.

    In a small bowl, mix the sliced flank steak with 1 tbsp soy sauce and 1 tsp sesame oil. Let it marinate for about 10-15 minutes while you prepare the other ingredients.

      Heat 1 tbsp vegetable oil in a wok or large skillet over high heat. Once hot, add the marinated beef and stir-fry for 2-3 minutes until the beef is browned and cooked through. Remove the beef from the pan and set it aside.

        In the same wok, add the remaining 1 tbsp vegetable oil. Add the sliced onion, bell pepper, and minced garlic. Stir-fry for 1-2 minutes until the vegetables begin to soften but remain crisp.

          Add the soaked rice noodles to the wok, along with the cooked beef. Toss everything together until well combined.

            Add 1 tbsp oyster sauce, 1 tbsp dark soy sauce, and 1 tsp sugar. Stir everything together, ensuring the noodles are evenly coated in the sauce. If using, splash in the Chinese rice wine for extra flavor. Season with salt and pepper to taste.

              Add the bean sprouts and chopped green onions. Give it a final toss and cook for another 1-2 minutes to allow everything to heat through.

                Transfer the Beef Chow Fun to serving plates. Serve hot with extra soy sauce or chili sauce if desired.
