For the Chicken Tenders:
- 2 large chicken breasts cut into strips
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 cup breadcrumbs or panko
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper optional
- 2 large eggs
- Vegetable oil for frying
For the Fries:
- 4 medium russet potatoes cut into fries
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
Cut the chicken breasts into even strips and soak them in buttermilk for at least 30 minutes.
In a shallow bowl, mix flour, breadcrumbs, salt, pepper, garlic powder, paprika, and cayenne. In another bowl, beat the eggs. Dredge each chicken strip in the flour mixture, dip in the egg, then coat with breadcrumbs.
Heat vegetable oil to 350°F (175°C). Fry the chicken tenders in batches for 4-5 minutes until golden brown and crispy. Drain on paper towels.
Toss the cut potatoes with olive oil, salt, pepper, and garlic powder. Bake at 425°F (220°C) for 25 minutes, flipping halfway, or deep-fry at 350°F (175°C) for 3-4 minutes until golden.
