For the Cake:
- 2 1/3 cups cake flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon skim milk powder
- 1 cup unsalted butter room temperature
- 1 3/4 cups granulated sugar
- 2 large eggs
- 4 large egg whites
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh strawberries finely chopped
- Pink food coloring
For the Buttercream Frosting:
- 1 cup unsalted butter softened
- 4 cups powdered sugar
- 2 tablespoons strawberry jam
- 1 teaspoon vanilla extract
- Milk as needed for consistency
For Decoration:
- Black licorice or black fondant for whiskers
- Red fondant for the bow
- Yellow food coloring for the nose
Preheat your oven to 325°F (165°C). Grease and flour two 9-inch round cake pans.
"In a bowl, sift together cake flour, baking powder, baking soda, salt, and skim milk powder.
In another bowl, combine buttermilk and vanilla extract."
Using an electric mixer, cream softened butter and granulated sugar until pale and fluffy.
Add eggs and egg whites one at a time, mixing well after each addition.
Alternately add dry ingredients and buttermilk mixture to the butter-sugar-egg mixture, beginning and ending with dry ingredients.
Divide the batter into two bowls. Mix chopped strawberries into one and add pink food coloring to the other.
Pour the pink and white batters into the pans, alternating to create a marbled effect. Tap pans gently to release air bubbles.
Bake for 30-35 minutes, or until a toothpick inserted comes out clean. Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely.
For frosting, beat softened butter until creamy. Gradually add powdered sugar, mixing well after each addition. Incorporate strawberry jam and vanilla extract. Adjust consistency with milk if needed.
Place one cake layer on a serving plate, spread frosting on top, and place the second layer on top. Apply a thin crumb coat, chill for 30 minutes, then apply a final smooth layer of frosting.
Decorate with black licorice or fondant whiskers, a red fondant bow, and a yellow fondant nose.
